Mee Hoon Goreng

- 300 g dried vermicelli noodles
- 2 tbsp olive oil
- 3 cloves garlic finely chopped
- 1 medium red onion
- 1 cup spring onions sliced like matchsticls
- 2 tbsp tomato paste
- 1.5 tbsp vegan sambal paste
- 1.5 tbsp light soy sauce
- 1 tbsp kecap manis
- salt to taste
- 150g extra firm tofu
- 200g bok choy
- 4 calamansi limes for garnish

Soak rice vermicelli noodles in hot water for 10 minutes.
Mince garlic and chop shallots, spring onions and bokchoy. Pan fry or air fry tofu until golden brown.
Mix together all sauces – kecap manis, light soy sauce, vegan sambal.
Heat oil in a wok over medium-high heat. Sauté shallots, white part of scallions until fragrant. Then, add minced garlic, and saute for a minute.
Add tomato paste and saute for a minute. Add your sauce mix.
Add back in the fried tofu, chopped bok choy and toss until cooked.
Add in the noodles - mix well and garnish with lime and coriander. Enjoy!
