- 1 cup shredded beetroot
- 1 cup shredded carrot
- 1/2 cup sliced cabbage
- 1/2 cup kidney beans
- 1/2 cup chopped kidney beans
- 3 cups water
- 1/2 cup vegetable stock
- 1 tsp balsamic vinegar
- 1 tsp sweetener
- 1 tsp dried dill
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp black pepper
- salt
Add olive oil to a pan. Add cabbage and saute until fragrant.
Add shredded vegetables and saute for 5-10 minutes.
Add salt, black pepper, onion & garlic powder. Add water, vegetable stock and simmer for about 20 minutes.
Add lemon juice, dried dill and serve with a dollop of vegans sour cream.
