Ingredients

  • 1 cup shredded beetroot
  • 1 cup shredded carrot
  • 1/2 cup sliced cabbage
  • 1/2 cup kidney beans
  • 1/2 cup chopped kidney beans
  • 3 cups water
  • 1/2 cup vegetable stock
  • 1 tsp balsamic vinegar
  • 1 tsp sweetener
  • 1 tsp dried dill
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • salt

Instructions

  • Add olive oil to a pan. Add cabbage and saute until fragrant.
  • Add shredded vegetables and saute for 5-10 minutes.
  • Add salt, black pepper, onion & garlic powder. Add water, vegetable stock and simmer for about 20 minutes.
  • Add lemon juice, dried dill and serve with a dollop of vegans sour cream.
