These veggie packed nuggets are an absolutely delight to snack – they’re also high in protein, fibre and deliciousness!

I think my definition of a girl dinner is either veggie packed instant noodles or veggie packed nuggets. And nothing is more delicious knowing that you’re taking in protein and fibre from what is deemed an ‘unhealthy’ snack. These veggie nuggets are far from that – not saying you shouldn’t have vegan nuggets replicating real meat, which I do every once and then – I also find this an easy way to use up any leftover beans or vegetables.
These nuggets have a total of 68 grams of protein and 46 grams of fibre – which is 17g protein and 11.5g fibre per serving. Definitely on the list of healthy snacks for me!

It’s also super quick to prepare – all you need is a food processor to dice the veggies for you finely – here we’re using chickpeas, edamame, extra firm tofu and seasonings. Shape them into nuggets, dip them in chickpea water and coat it in breadcrumbs. For my gluten free friends, substitute this with crushed cornflakes.

Chickpea Edamame Nuggets
Ingredients
- 1 can chickpeas
- 1/2 cup edamame
- 200 g extra firm tofu
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp vegan chicken seasoning
- 2 tbsp nutritional yeast
- 1/2 cup chickpea flour
- 1/4 tsp black pepper
- 1/2 tsp salt add more as needed
- chickpea water from a can
- 1 cup breadcrumbs or cornflakes (gluten free)
- olive oil
- dipping sauce sriracha, mayo or ketchup
Instructions
- Drain chickpeas from a can and save the chickpea water. Add chickpeas, chickpea flour, edamame, extra firm tofu, onion powder, garlic powder, vegan chicken seasoning, nutritional yeast, black pepper and salt to a food processor.
- Pulse a few times until the mixture is finely chopped.
- Shape the mixture into patties. Coat first in chickpea water, followed by panko breadcrumbs.
- Line the nuggets in an air fryer, spray a generous amount of olive oil and air fry for 15 minutes at 190C, flipping halfway.
- Serve with a dipping sauce of your choice. Enjoy!
