This easy vegan green chili, egg and tofu puffs stir-fry is so addictive and can be made in under 30 minutes!

This simple vegan stir-fried egg with green chilli dish originated in Hunan, China – and I’ve got to say from what I’ve tried so far, I love Hunan cuisine! Especially with their use of different types of fresh, pickled and fermented chilies. My favourite Hunan dishes (veganized) are definitely their green-chili eggplant dip and spicy stir fried cauliflower.

This stir fry is super simple to put together – all you need are green chilies, tofu or tofu puffs and a simple vegan egg. For the vegan egg, simply combine silken tofu, chickpea flour and a few seasonings to get that scramble like taste and texture.
You can pair this dish with steamed rice or my Easy Scallion Oil Noodles. They go so well together!
Chinese Green Chili Eggs & Tofu Puffs Stir fry
Ingredients
Vegan Egg
- 300 g silken tofu
- 2/3 cup soy or oat milk
- 1 tbsp nutritional yeast
- 4 tbsp chickpea flour
- 2 tbsp corn starch
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/4 tsp turmeric
- 1/2 tsp black salt
Green Chili Tofu Puffs Stirfry
- 2 tbsp sesame oil
- 1 pack tofu puffs 8-10
- 2 green chilies
- 6 cloves garlic
- 2 scallions white part
- 1 tbsp light soy sauce
- 1 tbsp black vinegar
- scallions for garnish green part
Instructions
- Slice tofu puffs and green chilies.
- Combine all the ingredients required for the vegan egg into a food processor. Blend on high under you get a smooth paste.
- Add oil to a pan, and add vegan egg mixture and spread evenly. Cover with a lid and cook until you see bubbles on the surface. This would take around 3-5 minutes.
- Flip the egg and scramble it on the pan. Keep aside.
- To the same pan, add sesame oil and saute garlic, white part of spring onions. Saute for 1-2 minutes.
- Add green chilies and saute for 1-2 minutes.
- Add tofu puffs, vegan egg, light soy sauce, shaoxing wine and mix well. Add some more black salt here if required.
- Garnish with scallions.
