    Vegan Teh Tarik (Pulled Tea)

    This traditional black tea is pulled with sweetened vegan condensed milk and dairy-free milk to create a sweet, frothy and creamy tea.

    Teh Tarik is a beloved traditional Malaysian and Singaporean drink made from strong black tea, sweetened condensed milk, and evaporated milk, which is “pulled” (or “tarik”) to create a frothy, smooth texture.

    The name “Teh Tarik” literally translates to “pulled tea”, as it points to the method of making it – which includes a dramatic pouring and stretching process that creates foam, froth and a smooth texture.

    The drink is especially popular in mamak stalls (open-air cafes run by Indian Muslim traders) where it’s served alongside traditional Malaysian food. It’s commonly enjoyed during breakfast, after meals, or as an afternoon pick-me-up, often served with roti canai (Indian flatbread).

    How Teh Tarik Is Made:

    1. The Tea Base
      • Traditionally, strong black tea (often a blend of Ceylon or Assam tea) is brewed. The tea is steeped until it is rich and robust, as the drink needs a strong base to stand up to the sweetness of the milk.
    2. Sweetened Milk
      • A generous amount of sweetened condensed milk is added to the tea, giving it sweetness and a creamy texture. Hence, there is no other sweetener added. For a plant based version, I used sweetened oat condensed milk by Nature’s Charm (not affiliated). They also have a vegan evaporated milk that you can for extra richness – but this recipe doesn’t include it.
    3. The “Pulling” Process
      • This is the signature step where the tea and milk mixture is poured back and forth between two cups at a high height. This helps to mix the tea and milk thoroughly while also creating the characteristic froth and smoothness.
      • The pulling also cools the tea to a drinkable temperature while enhancing its texture, making it rich and velvety.

    Ingredients

    • 4 heaped tsp black tea leaves
    • 1.5 cups water
    • 1 cup barista grade oat milk
    • 3 tbsp vegan condensed oat milk

    Instructions

    • Start by brewing fresh black tea leaves in 1.5 cups water. Bring to a boil and add in oat milk. Let it simmer for about 5 minutes.
    • Strain out the tea leaves using a sock filter and keep the hot tea aside.
    • Add sweetened condensed milk to a cup. Carefully pour the tea from one mug to the cup with the condensed milk. Mix well with a spoon.
    • Get a traditional teh tarik kettle and pour the tea into the kettle. Hold the kettle and the cup at opposite ends and pour in ascending height so the tea mixes well and a frothy head forms.
    • You would need to repeat this process around 5 times to create the signature froth and to cool the tea down to a drinkable temperature.
    • Pour the tea into a glass, with a nice frothy top.

    For both matcha and pistachio lovers, this is the PERFECT drink! Fresh dairy free pistachio butter blended with plant milk and topped with ceremonial grade matcha.

    The quest for pistachio matcha started when I was literally craving matcha with fresh pistachio flavours – none of that artificial stuff! AND to find a delicious dairy free version is definitely quite the struggle! What’s better than making it at home from scratch? (once we’ve nailed the pistachio butter, it’s gonna be so quick)

    What’s in this Iced Pistachio Matcha?

    • ice (obviously) but you can make it hot too!
    • pistachio butter (made from scratch!)
      • pistachios – deshelled pistachios
      • tahini – smooth, creamy tahini is preferred for the best texture
      • sweetener – maple syrup or agave works
      • vegan condensed milk – to really make this pistachio butter suitable to add milkshakes, smoothies, and even amazing as a spread. This is the one that I used!
    • plant milk – any milk works, but oat milk has the best taste in matcha
    • ceremonial grade matcha – none of that flavoured, artificial stuff! Get fresh ceremonial grade matcha with a vibrant green colour: that should be the colour of your drink

    Iced Pistachio Matcha

    Ingredients

    Pistachio Butter

    • 1 cup pistachios
    • 1/2 cup tahini (add more if mixture is too thick)
    • 320 g vegan condensed milk
    • 1/2 cup maple syrup
    • 1 tsp matcha for colour
    • 2 tbsp crushed pistachios

    Pistachio Matcha

    • 2 tsp ceremonial grade matcha
    • hot but not boiling water
    • 3/4 cup milk
    • 1 tbsp pistachio butter
    • 1 tbsp sweetener or condensed milk!
    • 1 cup ice
    • 1 tbsp crushed pistachios

    Instructions

    • Blend pistachios and half the amount of tahini until becomes a smooth butter -this would take about 3-5 minutes. Add in maple syrup and condensed milk and blend for 2 minutes until you get a smooth paste.
    • Add pistachio butter to a jar and keep aside.
    • To a high speed blender, add plant milk, pistachio butter and sweetener. Give it a good blend. For the hot version, bring this mixture to a boil over the stove or froth it in a coffee frother.
    • Sift the matcha powder with a strainer to ensure there are no clumps.
    • Heat up water but making sure it's not boiling. Add water to 2 tsp matcha and whisk with a matcha whisk until mixture is frothy.
    • Line the rim of the glass cup with pistachio butter and coat with crushed pistachios.
    • Add pistachio milk, followed by the matcha mixture. Enjoy!

    Dates, which are the fruit of the date palm tree, have a rich, caramel-like flavour and are naturally sweet. Medjool dates are the most flavourful and soft so they also make a natural sweetener in smoothies. Date shakes are often consumed to break a fast, particularly during Ramadan, as the sun sets.

    It’s no wonder this delicious and creamy drink is the perfect way to break fast or even start your day – dates provide a quick source of natural sugars to replenish energy levels after a day of fasting.

    While the traditional recipe is simpler, this version is packed with a little extra yummy ingredients like bananas, oats, flax meal and peanut butter so it’s the perfect smoothie you can drink before or after a workout!

    What Do I Need?

    • frozen bananas – these are key for the perfect texture.
    • medjool dates – these are the softest and most flavourful. You can try tunisian dates which are slightly less sweet but you can add more of them.
    • oats – you can use rolled or steel cut oats (steel cut oats will take longer to blend)
    • flax meal – you can substitute this with chia seeds or feel free to leave it out too if you don’t have them
    • cinnamon – to add some flavour
    • unsweetened peanut butter – bananas and dates already make this drink very sweet so a smooth unsweetened version would work best
    • unsweetened plant milk – I love oat or almond as they add a light refreshing touch

    This recipe will be gluten free if you use gluten free oats and oat milk. You could also leave out the oats and substitute with almond or soy milk. If you’d like it to be served more cold, toss in 2-3 ice cubes in there before blending!

    This creamy and refreshing spiced mexican drink is made from scratch with rice, almonds and cinnamon that will leave you wanting for more!

    Horchata is a rice based cold beverage that’s cooling and refreshing for hot summer temperatures. It can still be enjoyed all year round if you’re craving something creamy, sweet and spiced. There are different types of Horchata: for example, the Spanish version uses tiger nuts while Puerto Rico uses white, grounded sesame seeds.

    When made fresh with rice and raw almonds, the drink comes together beautifully and adding fresh spices like cinnamon do remind me of the festive season. It’s like making a nut milk with added flavours from natural ingredients from scratch at home!

    What You Need

    • long grain rice – this was convenient because I always have long grain basmati rice at home.
    • almonds – soaking raw almonds together with the rice makes the blending process easier and add an incredible aroma (basically fresh almond milk!)
    • cinnamon sticks – you can use ground cinnamon but the flavours from fresh cinnamon stick is unmatched!
    • plant milk – you can use almond milk or anything other plant milk. I used oat milk to add to the richness and creaminess.
    • condensed milk – this is optional, but I wanted to add some thickness and sweetness by using coconut condensed milk.
    • vanilla bean paste – for extra flavour
    • sweetener – if the drink needs a sweetener because you’re not using condensed milk, you can try adding maple syrup or agave syrup. Both work perfectly!

    Tips to make a smooth Horchata

    1. Soak for long

    Soak rice, almonds and nuts in water overnight so it’s easier to blend – discard the water after soaking them as they may contain not-so-nice stuff for the body (you can look it up!)

    2. Strain with a cheesecloth or a fine mesh strainer

    The last thing we want when drinking a Horchata is to be engulfed in raw rice grain bits and spices that were not fully strained. Remember to strain the mixture after blending with a cheesecloth or nut milk bag to get the milk and pulp as separately as possible.

    3. Blend multiple times, if required

    If there is a lot of pulp, I would suggest adding the pulp back into the blender and adding a cup of water to blend and drain more milk again. Milk it as much as possible!

    Vegan Horchata

    Ingredients

    • 1 cup long grain rice

    • Drain excess water and add rice, almonds, few pieces of broken cinnamon sticks and 2 cups of hot water to a high speed blender.
    • Blend on high for 2 minutes. Strain with a cheesecloth. If there is a lot of pulp remaining, toss in the blender and add a cup of water. Repeat the process.
    • The milk is ready. Add coconut condensed milk and whisk until fully combined. Add oat milk, vanilla bean paste, pinch of cinnamon and give it a good mix.
    • Serve over ice and sprinkle with cinnamon before serving. Enjoy!

    Notes

    This drink would be good in the fridge for 2 days as it’s made with fresh nut milk.

You can store this in the refrigerator for 2 to 3 days.

    This smoothie just takes 5 minutes to make with pantry staples and a good quality matcha powder. The matcha I used for this recipe was the Barista Blend by Naoki Matcha. (not sponsored).

    How to make the best THICK smoothie!

    The key to any good smoothie is the texture. Once you’ve nailed the texture, you are pretty much the smoothie master.

    Firstly, it’s important to use frozen fruits or vegetables. If the fruits are not frozen, chances are that your smoothie will be runny and it would taste most like a juice than a smoothie. Ensure that at least 1-2 fruits added are frozen.

    Secondly, it’s important to use a high speed blender to ensure the ingredients are blended together smoothly and there are no remaining chunks. I have heard good reviews about the Vitamix and Ninja brands but I have yet to try them!

    Lastly, it’s crucial to add the plant based milk in small amounts until you get the texture you desire. You can add even more less than the amount stated if you want the texture of a nice cream.

    The other ingredients to get that texture for the smoothie are: banana, frozen blueberries, gluten free oats, frozen avocado and any plant based milk. I used unsweetened oat milk!

    How much matcha powder should I add?

    I added 1 tsp of matcha powder but you can add more for a stronger caffeine boost. Use a high quality matcha powder to ensure that it blends well with the smoothie and doesn’t taste too bitter.
